Small chilled parfait with dark chocolate warm compote and raspberry meringues

PROCEDURE

Mix the eggs, sugar and honey together (image n°1), add the water and whisk the mixture. Melt the dark chocolate and add the whipped cream (image n°2). Combine the two mixtures together and mix well.

Raspberry compote: mix the raspberries, lemon juice and strawberry/red berry jam together.Warm in the microwave, if necessary and add a few drops of water (image n°3). Put the parfait into dessert moulds and smooth the top and freeze for at least 3 hours before turning out  (image n°4)


Remove the parfaits from the freezer and turn them out onto plates (image n°5). Drizzle over the warm raspberry/red berry compote and add a meringue (image n°6).

Dust with icing sugar and decorate with chocolate shavings (image n°7).   Finale image
